Bananas Foster

One of Michael's favorite desserts is Bananas Foster.  If it's on the menu at a restaurant, he's likely to order it.  How is it possible that I have never made it at home in 14 years of marriage?!

Pioneer Woman's recipe from her cookbook Food from my Frontier was easy as can be. 

I cut this recipe in half since it would just be Michael and me eating it.  And sadly, I didn't have any rum.  But this was really good without that added rum flavor.  


And I think a cast iron skillet is a requirement for this traditional dish.  If only we had Bluebell Homemade Vanilla ice cream, it would have been perfect.


1 stick butter
1 cup packed brown sugar
1/2 cup cream
2 bananas
1/2 cup chopped pecans or walnuts
Dash of cinnamon
Optional 1/2 cup rum

Melt the butter in the skillet.  Add the brown sugar and stir for a few minutes.  Add the cream.

Peel the bananas and slice on an angle.  Add bananas and nuts to skillet.  Continue to stir until thick and bubbly.
