This recipe for Dijon Chicken is from the Ultimate Southern Living Cookbook, a great basic cookbook that covers just about everything. This recipes includes the labels: quick, low carb, low calorie, low fat, and easy. You can't really cover any more bases than that. This recipe was very easy, and I served it with Uncle Ben's wild rice and vegetables. It was tasty and tender with a fairly strong dijon flavor. The sauce really thickens up while it simmers. I patted the chicken off before putting on the kids' plates to get rid of some of the dijon taste.
Ingredients
3 tablespoons butter
6 skinned and boned chicken breasts
1 (14 1/2-ounce) can chicken broth
1 medium-size sweet onion, diced
3 tablespoons all-purpose flour
3 tablespoons Dijon mustard
salt and pepper to season chicken before cooking
Melt butter in a large skillet over medium-high heat; add chicken, and cook 2 minutes on each side or until golden brown. Whisk together remaining ingredients, and pour over chicken. Cover, reduce heat to low, and simmer 20 minutes.
