Pumpkin Bread

Thanks to Grace Violet for this delicious pumkin bread recipe. I have made it twice now...once in mini-loaves and once as muffins. Yummy!

1 (15 ounce) can pumpkin
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon

Preheat oven to 350 degrees F (175 degrees C). Grease 5 mini loaf pans (also makes great muffins).

In a large bowl, mix together pumpkin, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.

Bake for about 30-40 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean. (Mine took closer to 40 minutes and maybe even could've gone for a few more. The muffins baked for about 25 minutes.)
