Melt in Your Mouth Pancakes


Michael is in charge of the pancake making around here, and he usually makes some on Saturday mornings.  I'm sure homemade pancakes are delicious, but we typically use some kind of mix.

After the batch this weekend, we have settled on our new favorite.  This was on the back of the Bisquick box.  The pancakes were very light, fluffy and tasty.  Mmmmm....melt in your mouth!

I went to the website to copy the recipe and noticed that it is different on the Bisquick website than the box!  Weird.  The website called for 2 T lemon juice and 2 t baking powder.  

The recipe below is the one we followed from the Bisquick box.

Melt in Your Mouth Pancakes

2cups Original Bisquick® mix
1cup milk
1tablespoon sugar
1tablespoon lemon juice
1teaspoon baking powder
2eggs
1 teaspoon vanilla

1.Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
2.Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.
3.Cook until edges are dry. Turn; cook until golden.
