Jammy Dodgers


When we lived in England, Jammy Dodgers were a favorite lunchbox treat for Grace and Jack. These are little shortbread cookies with a jam filling.

I still follow the British grocery chain Waitrose on social media, and saw their video about making giant jammy dodgers.  Here's the recipe on their website.

This was such a fun way to surprise the kids with something they loved from our time in England. They were very easy to make, and you probably have all of these ingredients on hand in your pantry.



Here's the recipe in US measurements.

1 cup butter, room temperature
1 cup powdered sugar
1/2 t vanilla
2 egg yolks
2 1/2 cups flour
Raspberry jam (preferably seedless)

1.  Beat butter and sugar together until pale and saftened.  Add the vanilla, egg yolks, and flour to make a soft dough.  Wrap in plastic wrap and refrigerate for about an hour.

2.  Heat oven to 350.  Roll out half of the dough to about 1/8".  Cut out with a round cutter.  Using a smaller cutter, cut out a center piece on each cookie.

3.  Bake for 10-12 minutes.  Remove and let cool.

4.  Place a spoonful of jam on a cookie.  Press a top cookie on.  Dust with powdered sugar if desired.
