Magnolia Silo Cookies


This is a winning cookie recipe from the second Magnolia cookbook - oatmeal, chocolate chips, peanut butter chips and nuts make this cookie outstanding. It is the signature cookie sold at the Magnolia Silos in Waco. 

These remind me a little of the chocolate chip cookie from Chick Fil A.  I think they would also be good with butterscotch chips replacing the peanut butter chips.  Give these a try next time you need a crowd-pleasing cookie.


Silo Cookies

1 cup (2 sticks) butter, room temperature
1 cup packed brown sugar
3/4 cup sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 t salt
1 t baking soda
1 1/2 cups rolled oats
1 1/2 cups semisweet chocolate chips
1 1/2 cups peanut butter chips
1/2 cup chopped walnuts

1.  Preheat oven to 350F.  Line baking sheet with parchment paper.

2.  In a mixer, cream the butter, brown sugar and sugar at medium speed until light and fluffy.  Reduce the speed and add the eggs one at a time.  Add the vanilla.

3.  In a medium bowl, whisk together flour, salt and soda.  Slowly add flour mixture to the mixer.  Reduce speed to low and add oats, chocolate chips, peanut butter chips, and walnuts.

4.  Scoop dough onto baking sheet and refrigerate at least 30 minutes.

5.  Bake for 13-15 minutes.  Let cool on baking sheet for about 10 minutes.  


Notes
*Makes 18 very large cookies or 36 medium size cookies.

*I make my medium cookies with a 2 T (1 oz) cookie scoop.  The very large cookies would be made with a 4 T (2 oz) cookie scoop.

*This recipe is easy to cut in half!
