A few weeks ago, the kids and I were shopping at City Centre. This upscale open air shopping center is on our side of town, but we rarely go. They have a great mix of restaurants and stores, and it's always a treat to go hang out there.
When we were in Sur La Table, Jack asked if he could get this mini donut pan. We bought it, and he found the BEST baked donut recipe to use.
This donut recipe is from the King Arthur flour website, and I thought I'd share here...for your enjoyment and my future reference! Click over to the King Arthur website to get a printable version...they are sooo good!
1/4 cup butter
1/4 cup vegetable oil
1/2 cup sugar
1/3 cup brown sugar
2 large eggs
1 1/2 t baking powder
1/4 t baking soda
1/2 t nutmeg (we didn't have this, so just added a pinch of cinnamon)
3/4 t salt
1 t vanilla
2 2/3 cup flour
1 cup milk
Preheat oven to 425. Lightly grease donut pan.
Beat butter, oil, and sugars until smooth. Add eggs, beating to combine.
Stir in baking powder, baking soda, nutmeg, salt, and vanilla.
Stir flour into mixture, alternating with milk. Begin and end with the flour.
Spoon into donut pan, fill about 2/3 up.
Bake about 10 minutes.
:: Cinnamon donuts - shake warm donuts in plastic bag with 1/4 cup cinnamon sugar.
:: Powdered sugar donuts - shake in bag with 1/2 cup powdered sugar
:: Frosted donuts - Mix 1 1/4 cup powdered sugar, 1 T melted butter, 1-2 T milk, and 1/2 t vanilla.
