Double Chocolate Muffins
My kids love, love, love, muffins! I'm always looking for recipes to make the muffins just a little bit healthier. Let's be honest...they would love a giant muffin from Starbucks or Costco anytime they could get it! But those are a little over the top for weekday mornings!
Here's a recipe I found on Mel's Kitchen Cafe that fit the bill for super yummy and a little bit healthier. Click over to her site to get a printable version.
2 1/4 cup flour
1 cup sugar
3/4 cup cocoa
1 1/2 t baking soda
1/2 t salt
3 eggs
1 cup sour cream (I used greek yogurt)
1/2 cup water or plum juice (I used prune juice)
1/2 cup milk
1/2 cup vegetable oil
1 t vanilla
1 cup chocolate chips
Preheat oven to 325.
In a large bowl, combine flour, sugar, cocoa, baking soda, chocolate chips, and salt. In a medium bowl, whisk together eggs, sour cream (yogurt), water (or juice) milk, oil and vanilla.
Make a well in the center of the dry ingredients and stir in the wet mixture, just until moistened.
Line muffin cups with paper liners, and fill to 1/2 or 2/3 full. Bake for 16-18 minutes.
Makes 24+ muffins.
