Give Homemade Waffles a Try!

After seeing this delicious recipe for waffles on Immeasurably More by Mandi, I decided to pull out my waffle iron from the back of the pantry.  

This was a wedding gift that we used a few times.  Then kids arrived on the scene, and it just seemed like a lot of trouble.  After all, Grace and Jack are just as happy with frozen Eggo's!

These waffles were tasty, easy to mix together, and fun to pour onto the griddle.  I'm sure you can predict which family member barely tried them...but I would still consider them a success.

I made several waffles without nuts.  Then I added the pecans for the adult waffles.  Delicious!

Orange-Pecan Waffles
2 cups all-purpose flour
4 Tbsp. sugar
2 tsp. baking powder
1/4 tsp. salt
2 eggs
2 cups orange juice
4 Tbsp. butter, melted
1 tsp. pure vanilla extract
1 cup chopped pecans

- In a medium bowl, stir together flour, sugar, baking powder and salt. In another bowl whisk together eggs, orange juice, butter, and vanilla.
- Pour liquid ingredients over dry ingredients; stir just until combined. Stir in pecans.
- Lightly spray or butter waffle iron, if needed. Pour 1/4 cup of mixture onto waffle iron plates (or amount recommended for your waffle iron); cook until golden brown.
- Top waffles with confectioners sugar, butter, whipped cream, or maple syrup if desired.

Makes about 10 waffles
