This recipe for green beans was in the November issue of Southern Living, and it gave me inspiration for our Thanksgiving dinner. The original recipe uses fresh green beans and has a cream sauce. Be sure to click over to see this version.
My modification used frozen green beans and didn't have a cream sauce. My version is below. The buttery homemade breadcrumbs were so delicious, and would make a great topping for so many dishes.
2-3 packages of frozen whole green beans
6 bacon strips
1 1/2 cups homemade bread crumbs (I pulsed some old bread in the food processor)
1 onion, thinly sliced
butter
olive oil
salt and pepper
1. Prepare frozen green beans in microwave as directed.
2. Cut bacon into pieces and cook in large skillet. Remove and drain on paper towel.
3. Remove a little bacon grease from pan if it seems like a lot. Add a pat of butter. Add breadcrumbs. Cook over medium heat until dry looking and golden brown in color. Remove from pan.
4. Add a little butter to pan. Saute onions until soft and brown. Remove from pan.
5. Finally, put hot green beans in pan to just coat them in the pan drippings. Stir. Add salt and pepper to taste.
6. Plate it up on a serving platter - green beans topped with onions, breadcrumbs, and bacon.
