Chocolate Chip Bars


I was looking for a twist on chocolate chip cookies, and found this recipe for chocolate chip blondies from one of my favorite cookbooks.  And it is actually based on an Ina Garten recipe that you can find in her Foolproof cookbook or here with a Food Network video.  You can click one the links if you want the printable recipe for a BIG pan of chocolate chip blondies.

I didn't want a 9x13 pan of these delicious treats for just the four of us, so I cut the recipe in half.  Here is my smaller version for an 8x8 pan.  Enjoy!


CHOCOLATE CHIP BARS

1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 stick butter, softened
1/2 cup brown sugar
1/4 cup sugar
1 teaspoon vanilla
1 egg
1 cup chocolate chips

1.  Set oven to 350F.  Spray 8x8 baking pan with Pam, and line with parchment.

2.  Whisk together flour, soda, salt, and cinnamon.

3.  In another bowl, use a mixer to combine butter, brown sugar, and white sugar.  Cream on high speed until light and fluffy.  

4.  Add vanilla, then add the egg.  Gradually mix in the dry ingredients.  Stir in chips.

5.  Spread in pan and bake for 25 minutes.  (For the larger pan, the baking time is 29 minutes.  I did that, and mine were a little darker than I'd like.)

6.  Let cool completely in pan before removing with the parchment and cutting into squares with a knife.
