Sugar Cookies




A quick and easy sugar cookie recipe from America's Test Kitchen.

1 1/2 cups sugar
2 1/2 cups flour
1/2 t baking powder
1/2 t salt
14 T butter, softened (175g)
2 t vanilla
2 eggs

1.  Set oven to 350 (180c)
2.  Whisk flour, powder and salt together.  Set aside.
3.  Beat butter and sugar with mixer until light and fluffy, 3-6 minutes.  Beat in vanilla, then eggs until combined.
4.  Put mixer on low and slowly add flour mixture.
5.  They say to roll into balls and then coat with sugar.  My dough was too wet for this, so I used my small scoop to place balls on the cookie sheet.  This worked great.
6.  Bake 10-12 minutes until edges just turn brown.  Cool on wire rack.
