I recently rediscovered Paula Deen via her magazine available through my library website. Using the library program Overdrive, I was able to browse the magazine and print out recipes I wanted to try.
This simple recipe for roasted sweet potatoes was a real winner. So easy and delicious!
Sweet Potato Wedges
6 Sweet Potatoes
2 T olive oil
2-3 T Cajun seasoning
Cut potatoes into wedges, about 8 wedges per potato. Toss with olive oil and seasoning. Place on baking pan. Roast at 400 until tender, about 30-45 minutes, turning once.
Chili Mayo Dipping Sauce
1 cup mayo
4 t lemon juice
2 t chili powder
2 t Dijon mustard
