Banana Muffins


We have a family recipe for banana bread that is delicious, but I was recently looking for a more bakery-style muffin recipe to use some ripe bananas.  I made a few modifications to this one I found on All Recipes, and this recipe will definitely be a keeper!  Light, fluffy, flaky and flavorful with a crunchy crumb topping...these banana muffins are delicious!




Banana Muffins - makes 12 muffins

1 1/2 cups flour
1 t baking soda
1 t baking powder
1/2 t salt
dash of cinnamon

3 ripe bananas, mashed
3/4 cups sugar
1 egg, lightly beaten
1/3 cup butter, melted

Topping
1/3 cup brown sugar
2 T flour
1/8 t cinnamon
1 T butter

1.  Preheat oven to 375F.  Lightly grease pan or line with muffin papers.

2.  In a large bowl, mix together flour, soda, powder, salt and dash of cinnamon.

3.  In another bowl, beat together bananas, sugar, egg, and melted butter.

4.  Add banana mixture to dry ingredients.  Stir just til moistened.  Add to muffin cups.

5.  In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon.  Cut in 1 tablespoon butter until mixture resembles coarse cornmeal.  Sprinkle on muffins.

6.  Bake 18-20 minutes.

Modifications I made:  I added some cinnamon to the muffin batter to give it a little more flavor.  I also made 12 muffins instead of the 10 described in the recipe.  You could definitely make 10 if you want more of the jumbo bakery-style muffins!
