Sour Cream Coffee Cake



This coffee cake is sooo delicious!  It's moist with swirls of cinnamon sugar throughout.  Because it's a bundt cake, it is perfect to bring to someone...easy to wrap up and carry.  And I bet you have all the ingredients for this in your pantry!

The recipe for this sour cream coffee cake is from Southern Living, so you know you can't go wrong!  (This is one of my all time favorite cookbooks, but it looks like it's out of print now.)  I hope you enjoy this coffee cake filled with vanilla and cinnamon flavors!



Sour Cream Coffee Cake 
adapted from Southern Living

1 cup packed light brown sugar
1 tablespoon cinnamon

3 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt

3/4 cup butter, softened
1 1/2 cups sugar
3 eggs
2 teaspoons vanilla
1 16oz sour cream

1.  Grease a 12 cup bundt pan.  Preheat oven to 350.

2.  Combine brown sugar and cinnamon, set aside.  Optional:  add 1 cup chopped pecans

3.  Combine flour, baking powder, baking soda, and salt.  Set aside.

4.  Beat butter and sugar until light and fluffy.  Add eggs one at a time.  Add vanilla.

5.  Add flour mixture, alternating with sour cream.  Begin and end with flour.

6.  Pour 1/3 of batter into pan.  Sprinkle with half of the brown sugar mixture.  Repeat, ending with batter.  

7.  Bake at 350 for 1 hour.  Cool in pan on wire rack for 10 minutes.  Run a knife around edges before gently turning over to remove cake.

8.  Optional:  Mix 1 cup powdered sugar with 1-2 tablespoons milk and a splash of vanilla for a quick icing to drizzle over the top.
