A few weeks ago, we had breakfast for dinner. This is a regular in our meal plan rotation, and it's often a go-to if I just don't feel like making a traditional dinner. Does anyone else just get tired of cooking chicken or tacos or pasta or casseroles? Sometimes BFD is just a fun change.
Instead of making the usual scrambled eggs or omelet, I pulled out my new Better Homes and Garden cookbook
. I love the new design of this old standard. It reads more like a magazine than a traditional cookbook. And they have lots of recipe pages that give additional options to make them more flexible. I found this recipe for an egg casserole that had mix and match ingredients.
Sometimes the best strategy is just KISS (Keep It Simple, Sweetie or Keep It Simple, Stupid...whichever one fits your mood.) Easy ingredients and a basic recipe made this really easy.
I cut the recipe in half, using 4 eggs instead of 8. This was perfect for our family. The original recipe would feed a crowd. The best part of this recipe is that you can mix up the ingedients. What a great way to use leftovers, lunchmeat you have on hand, veggies, etc.
