Magnolia Table's Cinnamon Bread


Whether you like a sweet cinnamon swirl bread or raisin cinnamon bread, this is a delicious recipe for you!  The covid time at home has given me time to practice making yeast breads, and I really love it.  I don't usually repost a recipe straight from a cookbook, but I couldn't find this one ANYWHERE online so I wanted to share it with you.


This recipe is from the second Magnolia Table cookbook.  Everything I have made from both the first and second cookbook has been delicious!  I especially like how the second cookbook lays flat when open.

This recipe makes 2 loaves of bread.

MAGNOLIA TABLE'S CINNAMON BREAD
BREAD
1/4 cup warm water
1 packet active dry yeast
1/2 cup plus 1 teaspoon sugar
3 3/4 cup bread flour (I used all-purpose)
1 t salt
4 T (half stick) unsalted butter, room temperature (I used salted)
1 cup warm whole milk
cooking spray

FILLING
1 T cinnamon
2/3 cup sugar

EGG WASH
1 large egg
2 T whole milk

1.  In a small bowl, combine warm water, yeast and 1 teaspoon sugar.  Let stand 5 minutes til foamy.

2.  In a stand mixer with dough hook, combine flour, remaining 1/2 cup sugar, and salt.  With mixer on low, slowly add yeast mixture, softened butter, and milk.  After mixing for 1 minute, put mixer on medium high and mix about 5 minutes til dough forms a ball.

3.  Spray a medium bowl with cooking spray and place dough in bowl.  Cover with tea towel and allow dough to rise for 1 hour.

4.  Make the filling:  Mix cinnamon and sugar in small bowl.

5.  Spray 2 8x4" bread pans with cooking spray.

6.  Punch down the dough to release the air and divide in half.  On a lightly floured surface, roll out one piece of dough into an 8" x 16" rectangle.

7.  Make egg wash by mixing egg and milk in a small bowl.  Using a pastry brush, brush egg wash over rolled out dough.  Sprinkle with half the cinnamon filling.  Add raisins if desired.

8.  Starting on the shorter side, tightly roll the dough away from yourself.  Place the loaf seam side down in the bread pan.  Repeat the process with the second ball of dough.

9.  Lightly cover pans with plastic wrap or tea towel.  Set in warm area to rise for 1 hour.  

10.  Preheat oven to 375.  

11.  Remove wrap and brush top of loaves with remaining egg wash.  Bake until golden brown for about 35 minutes.  Let bread cool in pans for 10 minutes and then on wire rack for at least 30 minutes.
