Molasses Cookies


I picked up a fun little fall cookbook from Gooseberry Patch - Fall Family Recipes - at Sam's Club.  My first recipe I tried was for Molasses Cookies.  I wanted to make a sweet treat that felt like fall, but without a pumpkin flavor.

These were so soft and delicious, definitely a keeper.  You might even have all the ingredients on hand.  I modified the original recipe to add pumpkin pie spice instead of cinnamon and ginger.  I will include both options here on the blog post.

I hope you give these a try.  This recipe is easy to cut in half, which is exactly what I did.  These would make a great treat for after school or in the lunch box.


As you can see, the ingredients are pantry staples.

Roll each scooped cookie in sugar.




The cookie scoops turn into perfectly round cookies.



Molasses Cookies
Makes 4 dozen

2 cups sugar
1 1/2 cups oil
2 eggs
1/2 cup molasses
4 cups flour
4 teaspoons baking soda
1 teaspoon salt

1 Tablespoon ginger and 2 teaspoons cinnamon
---OR---
2 to 3 teaspoons pumpkin pie spice

1.  Preheat oven to 350F.  Combine sugar, oil, eggs, and molasses.  Mix well with mixer.

2.  Add remaining ingredients.  Mix well.

3.  Roll dough into one inch balls OR use a cookie scoop to make a ball.  Roll in a bowl of sugar.

4.  Place on ungreased baking sheets.  Bake at 350 for 8-10 minutes.  Cool thoroughly on wire racks.
